Anyway very often raw desserts are too rich in fat in my opinion, and I'd rather have something cooked instead!
This cake... is probably, one of my favourites that I've ever done. It is all that I love. Moist, not too sweet, no heavy icing, cream or anything of that sort, only lemon&rosemary deliciousness!
Lemon are one of my favourite fruits, (stay tuned for a lemon pie recipe soon) and rosemary one of my favourite herbs, AND this cake also involves some olive oil, which I love.
It reminds me so much of the sun, the summer and the south of France, where I am from. Bref, it's great!
It's super easy to do, and here's what you'll need :
2cups of flour
1/2 cup of almond/oat/soy/ milk
baking powder (about 1ts)
1/4 cup of lemon juice
1/4 cup of sugar
1/3 cup of oil ( I used olive&canola oil)
and rosemary!
You'll also need some extra lemon juice&powder sugar to soak it with and make it all moist&soft!
You want to mix all the dry ingredients in a bowl as always, then chop the rosemary (as much as you like) and mix everything well!
Then add the lemon juice, the milk and the oil. Mix mix mix!
Add some lemon zests and place in the oven (180°C) for 25-30minutes!

The taste is definitely a bit unusual, but not to the point it would be too much, at least I think! It would be delicious and cute as well in muffins instead of a big cake! Probably more suited for a nice picnic!
